Gary started his career at Commercial Practice, S B Tietz and Partners in 1984. During this period he worked on a large range of major refurbishments and new build projects such as The Regency Hotel in South Kensington and Cable House in Bishopsgate. After two years at this Practice, Gary moved to Dewhurst Macfarlane and Partners where he became an Associate in 1989. He was responsible for a number of high profile projects such as University of East Anglia and Keble College, Oxford with Rick Mather Architects.

In 1994 Elliott Wood Partnership was founded by Gary Elliott and Paul Wood. Gary has helped to develop the practice to its current size and deals with projects ranging from small complex structures to multi-million pound developments. He is involved with a wide range of projects that include schools, commercial, residential developments, retail, healthcare, and bespoke houses and special structures. Glass engineering is a particular interest and he has been involved with many complex glass structures. Gary regularly teaches at architectural schools such as Greenwich University and Metropolitan University in North London and is on the Design Review Panel for Merton Borough.
